Chris was the Vice President of Hops Restaurant Bar and Brewery before creating Bonefish with Tim. They started out in St. Petersburg, FL in January of 2000, a good place to obtain fresh fish. They established three restaurants before OSI Restaurant Partners acquired them in October of 2001. OSI headquarters is in Tampa, FL, also a good place for fresh fish.
As of 2010, there were 152 locations in 28 states across the country. How would you get fresh fish in Columbus, OH? It is flown in daily to all Bonefish Grills, and inspected and hand cut on site. There are eight species to choose from every day, and they vary according to what is available, which is the natural way of things.
The specialty of the Bonefish Grill is market-fresh fish prepared to order over an oak-burning grill. The oak-burning grill allows for savory, even cooking. The restaurant also offers the "Bees Knees Martini." It was invented during prohibition to mask the smell of alcohol. It is made with real honey, basil, lemon and gin.
