History of Ruths Chris Steak House

Ruth Ann Udstad was born in New Orleans. An extremely bright child, she attended LSU at the age of 15 and majored in Chemistry and Physics. In 1965 she was a divorced mother who needed income to support her young boys, so she purchased a restaurant on the corner of Broad and Ursuline in New Orleans called Chris Steak House for $18,000.

Right after the purchase, hurricane Betsy hit New Orleans hard, and electricity was lost in the restaurant. Rather than have all the food spoil, Ruth Ann cooked all the meat and took it to Plaquemines Parrish where her brother lived to help the hurricane relief effort.

By 1970 the restaurant was doing well when a kitchen fire destroyed it. She purchased another building a few blocks away on Broad Street and opened Ruths Chris Steak House. She had to change the name because the contract with the original owner stipulated that she could not use the name Chris Steak house in another location. Some things that may seem unlucky are blessings in disguise.

By 1976 a business owner finally convinced Ruth to let him open a franchise of Ruths Chris Steak House in Baton Rouge. One year later she allowed other family members to open franchises of the now famous restaurant. By 1985 there were Ruths Chris Steak House restaurants around the United States and even overseas, and in 1992 Ruth was recognized by Inc. Magazine as the Regional Entrepreneur of the Year.

Forty-five years later, Ruth Chris Steak House is known as the premier steak house around the globe. There are 120 restaurants in just about every major city, as well as in Aruba, Canada, Hong Kong, Japan, Mexico, Taiwan, Puerto Rico, and the United Arab Emirates.

What is the restaurant known for? It is known for some of the best steaks that are sold in restaurants. The Filet is a tender cut of corn-fed beef from the Midwest. A Petite Filet is also available. The Ribeye is USDA prime that is marbled for flavor and is juicy and delicious. Cowboy Ribeye is a bone-in version of the Ribeye. New York Strip steak is full-bodied and slightly firmer than the Ribeye.

The steaks are seared to 1800 degrees and bought to the table topped with fresh butter and sizzling. It is a treat for the eyes, ears, nose, and taste buds.

Though Ruths Chris Steak House is well known for the juicy steaks, it also has other delicious entrees.

  • Barbeque Shrimp – shrimp reduced in white wine, butter, garlic, and spices and served on mashed potatoes.

  • Stuffed Chicken Breast – tender breast of free-range chicken stuffed with garlic herb cheese and served with lemon butter
  • Lobster – a whole Maine lobster weighing from 2.5 to 5 pounds
  • Cold Water Lobster Tail – served with drizzling butter and lemon
  • Market Seafood Selection – the fresh fish of the day
  • Personalized Potato and Vegetable Selection – a dish available for vegetarians

The restaurant also serves appetizers, soups, salads, and sides. Banana cream pie, apple crumb tarts, bread pudding with whiskey sauce, cheesecake, crème brulee, fresh berries with sweet cream sauce, and ice cream and sorbets grace the dessert menu.

Ruths Chris Steak House is open for lunch with great menu items, including a Louisiana Seafood Gumbo and Lobster Bisque.
